Ingredients

  • 2/3 cup semi-sweet chocolate chips
  • 6 ounces butter
  • 1 1/4 teaspoons vanilla extract
  • 4 large eggs
  • 1 1/2 cups sugar
  • 1 cup all purpose flour
  • FILLING INGREDIENTS
  • 8 ounces cream cheese, softened
  • 1/4 cup sugar
  • 1 large egg, beaten
  • 1/2 cup semi-sweet chocolate chips

How To Make fudge filled cupcakes

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Line 30 cupcake tins with paper or foil cupcake liners.
  • Step 3
    In double boiler, set over medium heat, melt the 2/3 cup of chocolate chips, butter and vanilla.
  • Step 4
    Stir until smooth.
  • Step 5
    Remove from heat.
  • Step 6
    Beat the eggs until frothy, using a whisk or electric mixer.
  • Step 7
    Gradually, beat in the sugar until it dissolves.
  • Step 8
    Gradually, beat in the flour.
  • Step 9
    Fold in the chocolate mixture.
  • Step 10
    Fill the cupcake tins 1/3 full with the chocolate batter.
  • Step 11
    Mash together the cream cheese, sugar and egg until blended.
  • Step 12
    Fold in the 1/2 cup of chocolate chips.
  • Step 13
    Drop a heaping teaspoonful of filling into each cupcake.
  • Step 14
    Cover cream cheese filling with another generous spoonful of batter.
  • Step 15
    Bake for 25 to 30 minutes.
  • Step 16
    Let cupcakes cool completely on a rack before storing in a covered container.
