This is so versatile. You can make it with any fruit you want. I have tried strawberry and blueberry so far and both are delicious!.

    1 cup all purpose flour
  • ·
    1/2 cup sugar
  • ·
    2 tsp baking powder
  • ·
    1/2 tsp salt
  • ·
    1 egg
  • ·
    1/2 cup milk
  • ·
    2 tbsp melted butter
  • ·
    1 1/2 cup sliced strawberries or any other fruit
  • ·
  • ·
    1/2 cup packed brown sugar
  • ·
    6 tbsp flour
  • ·
    1/2 cup oatmeal
  • ·
    1/4 cup chopped pecans
  • ·
    6 tbsp cold butter

How to Make Fruit Coffee Cake


  1. In a large bowl, mix the first seven ingredients. Pour into a greased 8 inch square pan. Top with a layer of fruit. In a stand mixer (or by hand) mix topping ingredients and crumble over the fruit. Bake at 375 degrees for 35 minutes.
