This is a favorite at reunions and church suppers. The recipe works just as well using margerine or butter-flavored Crisco.

Ingredients

  • 1/2 c
    butter, softened
  • 1/2 c
    sugar
  • 2
    eggs, beaten
  • 2 tsp
    soda
  • 1/4 c
    brown sugar, firmly packed
  • 2 c
    all purpose flour
  • 1 can(s)
    fruit cocktail
  • 1 tsp
    vanilla extract
  • ICING

  • 3/4 c
    sugar
  • 1/2 c
    butter
  • 1/2 c
    evaporated milk
  • 1 Tbsp
    all purpose flour
  • 1/2 c
    coconut
  • 1/2 c
    chopped pecans or chopped walnuts

How to Make Fruit Cocktail Cake

Step-by-Step

  1. Cream together butter, sugar, eggs, and brown sugar.
  2. Add soda, flour, fruit cocktail and vanilla. Blend thoroughly.
  3. Spray 9x13 inch cake pan with nonstick spray. Pour cake batter into pan.
  4. Bake at 350 degrees for 40 minutes or until a toothpick inserted in center comes out clean.
  5. For icing, in medium saucepan, combine sugar, butter, evaporated milk and flour. Slowly bring to boil, stirring occasionally.
  6. Cook 2 minutes and add nuts and coconut. Spread warm over warm cake. Can be served warm or cold.
