This is a favorite at reunions and church suppers. The recipe works just as well using margerine or butter-flavored Crisco.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 - eggs, beaten
  • 2 teaspoons soda
  • 1/4 cup brown sugar, firmly packed
  • 2 cups all purpose flour
  • 1 can fruit cocktail
  • 1 teaspoon vanilla extract
  • ICING
  • 3/4 cup sugar
  • 1/2 cup butter
  • 1/2 cup evaporated milk
  • 1 tablespoon all purpose flour
  • 1/2 cup coconut
  • 1/2 cup chopped pecans or chopped walnuts

How To Make fruit cocktail cake

  • Step 1
    Cream together butter, sugar, eggs, and brown sugar.
  • Step 2
    Add soda, flour, fruit cocktail and vanilla. Blend thoroughly.
  • Step 3
    Spray 9x13 inch cake pan with nonstick spray. Pour cake batter into pan.
  • Step 4
    Bake at 350 degrees for 40 minutes or until a toothpick inserted in center comes out clean.
  • Step 5
    For icing, in medium saucepan, combine sugar, butter, evaporated milk and flour. Slowly bring to boil, stirring occasionally.
  • Step 6
    Cook 2 minutes and add nuts and coconut. Spread warm over warm cake. Can be served warm or cold.
