I got this out of a church cookbook. Makes a nice easy cake.

Ingredients

  • 2 c
    flour
  • 2
    eggs
  • 1 1/2 c
    sugar
  • 1 (16 oz.) can(s)
    fruit cocktail
  • 2 tsp
    baking soda
  • 1 tsp
    vanilla
  • ·
    frosting ingredients
  • 1 stick
    margarine
  • 1/2 c
    canned evaporated milk (not condensed)
  • 1 tsp
    vanilla
  • 1 c
    granulated sugar
  • 1 c
    flaked coconut
  • 1/2 c
    chopped nuts

How to Make Fruit Cocktail Cake

Step-by-Step

  1. For Cake: Mix all ingredients well.
  2. Pour into greased and floured 9x13 pan.
  3. Bake at 350 degrees for 30-35 minutes.
  4. Cool.
  5. For Frosting: Mix all ingredients in saucepan. Boil together 1 minute.
  6. Cool and spread on cooled cake.
