Ingredients

  • 2 c
    all purpose flour
  • 1 1/2 c
    sugar
  • 2 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • 1 can(s)
    fruit cocktail, in syrup
  • 2 large
    eggs
  • FROSTING

  • 3/4 c
    sugar
  • 1/4 c
    evaporated milk
  • 1/2 tsp
    vanilla extract
  • 2/3 c
    butter
  • 1/2 c
    chopped pecans
  • 1/2 c
    coconut, shredded

How to Make Fruit Cocktail Cake

Step-by-Step

  1. Combine flour, sugar, baking soda, baking powder,and salt, Then add fruit cocktail with juice and 2 eggs. Bake in greased and floured 13x9 pan at 350 degrees for 1 hour and 15 minutes.
  2. Mix sugar, milk, vanilla, and butter. Mix well, place on medium burner and when it comes to a rolling boil, lower heat and cook 7 minutes or til thickened. Add nuts and coconuts. Pour over warm cake.
