This is an easy decadent cake that everyone will love. The longer it sits the more moist it becomes. Can be made with fruit cocktail or even diced peaches. this cake is great

Ingredients

  • 2 cups flour
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon vanilla extract
  • 2 - eggs
  • pinch - salt
  • 1 - large can fruit cocktail, undrained
  • 1 stick margarine (must be stick form)
  • 2/3 cup canned evaporated milk
  • 1 1/4 cups sugar
  • 1 teaspoon vanilla extract

How To Make fruit cocktail cake

  • Step 1
    preheat oven to 350. Grease a 9 x 13 pan. Mix together first 7 ingredients in large bowl. Pour into prepared pan and bake approximately 45 minutes or until cake reaches a deep golden color and springs back when pressed in center
  • Step 2
    While cake is baking, in a medium saucepan, mix the 1 stick margarine, 2/3 cup evaporated milk, 1 1/4 cup sugar and the vanilla extract and bring to boil. once boiling, let it boil for 3 minutes then remove from heat. Once cake is done pour this glaze over hot cake and allow cake to cool completely
