My family love's this Cake.It is so moist and good. You can't stop at 1 peice.I have been making this cake for 10 year's now.Had it at a friend's house and I loved it so much, I had to have the recipe.You will enjoy it and great hit at potluck's.

Ingredients

  • 2 cups - all purpose flour
  • 11/2 cups - white sugar
  • 1/2 tsp. - salt
  • 2 tsp. - baking soda
  • 13/4 cups - fruit cocktail (15oz.can)
  • 1/4 cup - brown sugar
  • 1/2 cup - walnuts
  • 1 - stick margarine
  • 3/4 cup - evaporated milk
  • 3/4 cup - white sugar
  • 1 tsp. - vanilla extract
  • 1 cup - coconut

How To Make fruit cocktail cake

  • Step 1
    Mix first five ingredents, with hand beat until well mixed.Add fruit cockail and mix. Will be thick.Pour into ungreased 9x12 pan.Sprinkle brown sugar and nuts on top.Bake 35 to 45 minutes ln a 300 degree oven.Put topping on after cake is done baking.
  • Step 2
    Topping: In sauce pan add a stick of margarine, evaporated milk,white sugar,vanilla and coconut.Cook ingredients until topping is hot.With a big spoon spread over cake. Let cake and topping cool before serving.
