This is a recipe that I want to enter into the Heirloom recipe contest. My Mother used to make this cake for my Dad's lunch. My sister and I did not like this cake then, nor do we now! We always wanted layer cakes with frosting. He was unable to carry a layer frosted cake in his lunch, so we had very few of those cakes. Needless to say I will not have an attached photo.

Makes a 13 x 9 x 2 cake
Ingredients
- 2 - eggs
- 1 can fruit cocktail, in syrup
- 2 cups all purpose flour
- 1 1/2 cups sugar
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking soda
- - brown sugar
- ICING:
- 1 can evaporated milk
- 1 1/2 cups sugar
- 1 cup coconut
How To Make fruit cocktail cake

Step 1Preheat oven to 350 degrees. Mix together unbeaten eggs and undrained fruit cocktail in large mixing bowl.

Step 2Sift together flout, sugar, salt, and baking soda. Add dry ingredients to fruit cocktail mixture.

Step 3Pour mixture into 13x9x2 inch greased pan. Sprinkle top with brown sugar. Bake at 350 degrees for 45 minutes.

Step 4Icing: Combine milk and sugar in medium size pan and bring to a boil. Cool. Add coconut and then pour on cake.
