I wrote this recipe just a couple weeks ago when I had a craving for fruitcake. It might not be that traditional or what you are use to but its pretty good. Give it a try.

Ingredients

  • 1/2 cup solid shortening
  • 1 cup butter or margarine
  • 3 cups brown sugar
  • 5 large eggs
  • 3 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon vanilla
  • 1 cup shredded coconut
  • 1 cup marshino cherries, drained and chopped
  • 1 cup pecans or walnuts, chopped
  • 1 cup pineapple tidbits, drained
  • 1 cup applesauce
  • 1 cup raisins

How To Make fruit cake

  • Step 1
    Cream together shortening, butter or margarine and brown sugar.
  • Step 2
    Add eggs one at a time.
  • Step 3
    Add vanilla.
  • Step 4
    In a large bowl combine flour, salt, baking powder, cinnamon, nutmeg, coconut, cherries, pecans or walnuts, pineapple, and raisins and mix until all the fruit is coated with flour.
  • Step 5
    Add flour and fruit mixture at one to mixer along with applesauce and mix just until combined.
  • Step 6
    Pour into a greased and floured tube pan.
  • Step 7
    Bake at 325 degreese for 1 hour and 15 minutes without opening the oven door. Check cake with a knife or long toothpick to see if it is done. If the knife or toothpick comes out still wet bake a little longer. When done allow to cool atleast 30 minutes before removing it from the pan.
