I wrote this recipe just a couple weeks ago when I had a craving for fruitcake. It might not be that traditional or what you are use to but its pretty good. Give it a try.

solid shortening
1 c
butter or margarine
3 c
brown sugar
5 large
3 c
all purpose flour
1 tsp
1 tsp
baking powder
1 Tbsp
1 tsp
1 Tbsp
1 c
shredded coconut
1 c
marshino cherries, drained and chopped
1 c
pecans or walnuts, chopped
1 c
pineapple tidbits, drained
1 c
1 c

How to Make Fruit Cake


  • 1Cream together shortening, butter or margarine and brown sugar.
  • 2Add eggs one at a time.
  • 3Add vanilla.
  • 4In a large bowl combine flour, salt, baking powder, cinnamon, nutmeg, coconut, cherries, pecans or walnuts, pineapple, and raisins and mix until all the fruit is coated with flour.
  • 5Add flour and fruit mixture at one to mixer along with applesauce and mix just until combined.
  • 6Pour into a greased and floured tube pan.
  • 7Bake at 325 degreese for 1 hour and 15 minutes without opening the oven door. Check cake with a knife or long toothpick to see if it is done. If the knife or toothpick comes out still wet bake a little longer. When done allow to cool atleast 30 minutes before removing it from the pan.
