I wrote this recipe just a couple weeks ago when I had a craving for fruitcake. It might not be that traditional or what you are use to but its pretty good. Give it a try.

Ingredients
- 1/2 cup solid shortening
- 1 cup butter or margarine
- 3 cups brown sugar
- 5 large eggs
- 3 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- 1 tablespoon vanilla
- 1 cup shredded coconut
- 1 cup marshino cherries, drained and chopped
- 1 cup pecans or walnuts, chopped
- 1 cup pineapple tidbits, drained
- 1 cup applesauce
- 1 cup raisins
How To Make fruit cake

Step 1Cream together shortening, butter or margarine and brown sugar.

Step 2Add eggs one at a time.

Step 3Add vanilla.

Step 4In a large bowl combine flour, salt, baking powder, cinnamon, nutmeg, coconut, cherries, pecans or walnuts, pineapple, and raisins and mix until all the fruit is coated with flour.

Step 5Add flour and fruit mixture at one to mixer along with applesauce and mix just until combined.

Step 6Pour into a greased and floured tube pan.

Step 7Bake at 325 degreese for 1 hour and 15 minutes without opening the oven door. Check cake with a knife or long toothpick to see if it is done. If the knife or toothpick comes out still wet bake a little longer. When done allow to cool atleast 30 minutes before removing it from the pan.
