I wrote this recipe just a couple weeks ago when I had a craving for fruitcake. It might not be that traditional or what you are use to but its pretty good. Give it a try.

Ingredients

  • 1/2 c
    solid shortening
  • 1 c
    butter or margarine
  • 3 c
    brown sugar
  • 5 large
    eggs
  • 3 c
    all purpose flour
  • 1 tsp
    salt
  • 1 tsp
    baking powder
  • 1 Tbsp
    cinnamon
  • 1 tsp
    nutmeg
  • 1 Tbsp
    vanilla
  • 1 c
    shredded coconut
  • 1 c
    marshino cherries, drained and chopped
  • 1 c
    pecans or walnuts, chopped
  • 1 c
    pineapple tidbits, drained
  • 1 c
    applesauce
  • 1 c
    raisins

How to Make Fruit Cake

Step-by-Step

  1. Cream together shortening, butter or margarine and brown sugar.
  2. Add eggs one at a time.
  3. Add vanilla.
  4. In a large bowl combine flour, salt, baking powder, cinnamon, nutmeg, coconut, cherries, pecans or walnuts, pineapple, and raisins and mix until all the fruit is coated with flour.
  5. Add flour and fruit mixture at one to mixer along with applesauce and mix just until combined.
  6. Pour into a greased and floured tube pan.
  7. Bake at 325 degreese for 1 hour and 15 minutes without opening the oven door. Check cake with a knife or long toothpick to see if it is done. If the knife or toothpick comes out still wet bake a little longer. When done allow to cool atleast 30 minutes before removing it from the pan.
