frosted pumpkin spice cookies
These are one of my husband's favorite cookies. You may think "fall" because of the pumpkin, but these are great any time of the year. I've been making them for over 20 years & my recipe card is tattered & dirty. So happy that I can post it here for everyone to enjoy and it will be easier for me to keep up with, too!

Makes approx. 4 dozen
Ingredients
- 1/2 cup shortening
- 1 cup sugar
- 2 - eggs, beaten
- 1 cup solid pack pumpkin
- 2 cups sifted flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1 cup raisins
- 1 cup chopped nuts (optional)
- FROSTING
- 2 cups confectioners sugar
- 1 tablespoon lemon juice (or 1/2 teaspoon lemon extract)
- - just enough milk for spreading consistency
How To Make frosted pumpkin spice cookies

Step 1Preheat oven to 350 degrees.

Step 2Cream shortening; gradually beat in sugar. Add eggs and pumpkin; mix well.

Step 3Sift flour, baking powder, salt, & spices together. Add to pumpkin mixture; mix well. Add raisins and nuts.

Step 4Drop by heaping teaspoonfuls onto greased baking sheets. Bake about 15 minutes or until firm to the touch. Remove cookies, cool, and frost. (I like to make the frosting more the consistency of a glaze. To do so just add enough water or milk to thin the frosting).
