Just in time for the holidays, these bars are divine and I could eat them by the dozen. That's why I don't make them but once a year.

Ingredients

  • 4 large eggs
  • 1 2/3 - sugar
  • 1 cup vegetable oil
  • 1 can 15oz solid pack pumpkin
  • 2 cups all purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • CREAM CHEESE ICING
  • 1 package 3 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla
  • 1-2 tablespoon milk

How To Make frosted pumpkin bars

  • Step 1
    In a mixing bowl, beat eggs, sugar, oil and pumpkin. Combine flour, cinnamon, baking powder, baking soda and salt; gradually add to pumpkin mixture and mix well. Pour into an ungreased 15"x10"x1" baking pan( a cookie sheet with an edge will work)
  • Step 2
    Bake 350 degrees for 25-30 minutes. Cool completely.
  • Step 3
    For icing, beat cream cheese, sugar and butter and vanilla in small mixing bowl. Add enough milk to achieve desired spreading consistency. Spread over bars.
