Just in time for the holidays, these bars are divine and I could eat them by the dozen. That's why I don't make them but once a year.

Ingredients

4 large
eggs
1 2/3
sugar
1 c
vegetable oil
1 can(s)
15oz solid pack pumpkin
2 c
all purpose flour
2 tsp
ground cinnamon
2 tsp
baking powder
1 tsp
baking soda
1 tsp
salt

CREAM CHEESE ICING

1 pkg
3 oz cream cheese, softened
2 c
powdered sugar
1/4 c
butter, softened
1 tsp
vanilla
1-2 Tbsp
milk

How to Make Frosted Pumpkin Bars

Step-by-Step

  • 1In a mixing bowl, beat eggs, sugar, oil and pumpkin. Combine flour, cinnamon, baking powder, baking soda and salt; gradually add to pumpkin mixture and mix well. Pour into an ungreased 15"x10"x1" baking pan( a cookie sheet with an edge will work)
  • 2Bake 350 degrees for 25-30 minutes. Cool completely.
  • 3For icing, beat cream cheese, sugar and butter and vanilla in small mixing bowl. Add enough milk to achieve desired spreading consistency. Spread over bars.
