Ingredients
- CRUST
- 2 1/2 cups frosted animal cracker finely processed in food processor
- 1/4 cup melted butter
- CHEESECAKE FILLING
- 24 ounces cream cheese softened
- 1 cup sugar
- 3 tablespoons flour
- 1 cup sour cream
- 1 tablespoon vanilla extract
- 4 large eggs
- 2 cups finely chopped frosted animal crackers divided
- WHITE CHOCOLATE GANACHE
- 6 ounces white chocolate
- 1/4 cup heavy whipping cream
- - pink food coloring
- WHIPPED CREAM
- 1/2 cup whipping cream
- 4 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
How To Make frosted animal cracker cheesecake

Step 1For the Crust Preheat oven 325 degrees. Line a springform pan with parchment paper and grease it. Combine the crust ingredients in a small bowl. Press in bottom of pan and bake 10 minutes. Set aside to cool then wrap the outside of the pan with foil.

Step 2For the cheesecake Reduce the heat to 300 degrees. In a large mixing bowl mix the cream cheese, sugar, and flour on low speed. Add the sour cream and vanilla still mixing on low speed. Add one egg at a time mixing on low speed. Stir in 1 1/4 cups of the frosted animal cracker crumbs. Stir slowly. Pour the cheesecake mixture over the crust. Place the foil wrapped springform pan in another bigger pan and fill with warm water half way up the sides of the springform pan.

Step 3Bake for 1 and 1/2 hours. Turn the oven off and leave in the oven for another 30 minutes. Remove cheesecake from oven and let sit until cool. Refrigerate for 5 or 6 hours.

Step 4To make the ganache Melt the white chocolate with the whipping cream. Let cool and color with pink food coloring. When cooled completely spread over the top of the cheesecake then sprinkle the remaining 3/4 cup frosted animal cracker crumbs.

Step 5To make the whipped cream Whip the heavy cream , powdered sugar, and vanilla until stiff. Place a doll up on top of each piece of cheesecake and top with a half of a frosted animal cracker. Store in refrigerator
