This recipe was given to me by my mother-in-law almost 30 years ago and is really more like a coffee cake.

Ingredients

1/2 c
shortening
1 1/2 c
sugar
1/2 tsp
salt
1 medium
egg
1 tsp
baking soda
1 c
sour milk or buttermilk
2 c
plus 1 tbsp flour
3-4 c
fresh rhubarb, cut fine

TOPPING

1/3 c
sugar
1/3 c
chopped walnuts or pecans
1 tsp
cinnamon

How to Make Fresh Rhubarb Cake

Step-by-Step

  • 1Cream shortening, add sugar and mix well. Add salt, beat in egg. Add soda to the milk; stir to combine then add milk mixture and the flour alternately. Beginning and ending with flour.
  • 2Stir in rhubarb. Pour into 9x13 or 2-round metal cake pans. Mix topping ingredients together & sprinkle over cake batter.
  • 3Bake 45 minutes at 350 degrees.
