i recently visited the local orchard and ended up with 17 lbs of apples, not to mention 30 lbs of peaches. anyway after using some of this wonderful fresh fruit in a few recipes and freezing some also, i started craving something wonderfully sweet and moist. so after going through MANY recipes i found an old pineapple upside down cake my mom used to make, which was awesome, i made a few changes and ended up with exactly what i wanted. you just cant go wrong when it comes to mom's recipes!
1Heat oven to 350. Melt butter in cast iron skillet over low heat. When almost melted turn off heat,add the br. sugar and evap milk or cream, stir until ingredients are incorporated. smooth sugar mixture in pan. Arrange apple slices on top of sugar mixture.
2Sift flour, cin, and salt. Cream together shortening and sugar until smooth, add egg, then gently beat in dry ing alternating with milk. add vanilla.
3Pour batter over apples, careful not to stir mixture, smooth batter with wooden spoon. bake 35-45 min or until toothpick comes out clean.
