This cake is moist and full of apples and I love it with the pecans on top to add even more flavor.

Ingredients
- 1 cup oil
- 2 cups sugar
- 2 - eggs, beaten
- 1/4 cup apple juice or cider, ( can add more if needed )
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons cinnamon
- 2 teaspoons vanilla extract
- 3 cups apples, chopped & peeled
- 1 cup pecans, whole or chopped
- dash allspice, ground
How To Make fresh apple cake with pecans

Step 1Preheat your oven to 325F. Grease & flour a bundt pan or I used a 13x9inch dish. Mix together oil and sugar in a large bowl. Add eggs, vanilla and apple juice and mix well.

Step 2In a medium bowl, mix the next 4 ingredients together and set aside. In another medium bowl have your apples chopped and ready to go.

Step 3Mix your dry ingredients to the apple juice mixture and blend well. Fold your apples into the batter only enough to distribute the apples. Sprinkle 1 or 2 dashes of allspice over the top of the cake (I used my fingers) and place your whole pecans (or you can chop them) on top of cake. Bake 55 minutes or until cakes test done in center with a toothpick.
