My ex husbands grandparents owned an apple orchard. She was known as the apple lady. She made many good things with apples. Her pies, apple danish, cakes and everything were excellent. Here is her favorite apple cake recipe. This is a very moist cake.

- 3 cups flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 3 cups finely chopped apples
- 1/2 cup chopped nuts
- 1 teaspoon grated lemon peel or zest
- 2 cups sugar
- 1 1/2 cups oil
- 2 - eggs, beaten
How To Make fresh apple cake from granny

Step 1Preheat oven to 350 degrees. Grease and flour 13X9 inch cake pan or two round pans.

Step 3I combine sugar, oil, eggs and lemon zest. Beat until light colored. Add flour, salt and baking soda. Beat until combined. Stir in apples and nuts.

Step 4Pour into a prepared pan and bake for 45 minutes. Cool. Test cake to be sure it is done.

Step 5Granny preferred this with whip cream or frosted with a chocolate buttercream frosting. She liked nuts around the outside!

Step 6Another option: Beat 8 ounces room temp. cream cheese, 1 tablespoon butter, 1 teaspoon vanilla and 1 pound powdered sugar until combined and smooth. Frost cake and put chopped nuts around the outside of cake.
