In the early 1960's my mom worked at Parke Davis with a woman named Joyce who was a fantastic baker. This is one of her recipes, and everyone I've ever served it to has raved about it and requested the recipe. I hope others here will enjoy it too.

Ingredients
- 1 cup salad oil
- 2 cups sugar
- 3 - beaten eggs
- 3 cups sifted flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 cups finely chopped apple
- 1 teaspoon vanilla extract
- CAKE FROSTING
- 1/2 cup butter
- 1 cup light brown sugar
- 1/4 cup evaporated milk
- 2 teaspoons vanilla extract
How To Make fresh apple cake

Step 1Mix oil, sugar, beaten eggs and vanilla in large bowl.

Step 2Sift dry ingredients and add to oil egg mixture.

Step 3Fold in apples and chopped nuts.

Step 4Place batter into a greased and floured tube pan or bundt pan.

Step 5Bake at 325 for 45 minutes to an hour or until toothpick inserted into cake tests clean.

Step 6Next to make frosting mix butter, brown sugar, and evaporated milk in saucepan.

Step 7Bring mixture to a full boil stirring constantly for about 1 minute.

Step 8Remove from heat and let cool, then add 2 teaspoons of vanilla extract

Step 9Let cake cool about 45 minutes and spoon frosting over the top
