In the early 1960's my mom worked at Parke Davis with a woman named Joyce who was a fantastic baker. This is one of her recipes, and everyone I've ever served it to has raved about it and requested the recipe. I hope others here will enjoy it too.

Ingredients

  • 1 cup salad oil
  • 2 cups sugar
  • 3 - beaten eggs
  • 3 cups sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups finely chopped apple
  • 1 teaspoon vanilla extract
  • CAKE FROSTING
  • 1/2 cup butter
  • 1 cup light brown sugar
  • 1/4 cup evaporated milk
  • 2 teaspoons vanilla extract

How To Make fresh apple cake

  • Step 1
    Mix oil, sugar, beaten eggs and vanilla in large bowl.
  • Step 2
    Sift dry ingredients and add to oil egg mixture.
  • Step 3
    Fold in apples and chopped nuts.
  • Step 4
    Place batter into a greased and floured tube pan or bundt pan.
  • Step 5
    Bake at 325 for 45 minutes to an hour or until toothpick inserted into cake tests clean.
  • Step 6
    Next to make frosting mix butter, brown sugar, and evaporated milk in saucepan.
  • Step 7
    Bring mixture to a full boil stirring constantly for about 1 minute.
  • Step 8
    Remove from heat and let cool, then add 2 teaspoons of vanilla extract
  • Step 9
    Let cake cool about 45 minutes and spoon frosting over the top
