In the early 1960's my mom worked at Parke Davis with a woman named Joyce who was a fantastic baker. This is one of her recipes, and everyone I've ever served it to has raved about it and requested the recipe. I hope others here will enjoy it too.

Ingredients

  • 1 c
    salad oil
  • 2 c
    sugar
  • 3
    beaten eggs
  • 3 c
    sifted flour
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1 tsp
    cinnamon
  • 3 c
    finely chopped apple
  • 1 tsp
    vanilla extract
  • CAKE FROSTING

  • 1/2 c
    butter
  • 1 c
    light brown sugar
  • 1/4 c
    evaporated milk
  • 2 tsp
    vanilla extract

How to Make Fresh Apple Cake

Step-by-Step

  1. Mix oil, sugar, beaten eggs and vanilla in large bowl.
  2. Sift dry ingredients and add to oil egg mixture.
  3. Fold in apples and chopped nuts.
  4. Place batter into a greased and floured tube pan or bundt pan.
  5. Bake at 325 for 45 minutes to an hour or until toothpick inserted into cake tests clean.
  6. Next to make frosting mix butter, brown sugar, and evaporated milk in saucepan.
  7. Bring mixture to a full boil stirring constantly for about 1 minute.
  8. Remove from heat and let cool, then add 2 teaspoons of vanilla extract
  9. Let cake cool about 45 minutes and spoon frosting over the top
