This is my mother's recipe. She always made it for holiday dinners. It is always a hit with family & friends. I get lots of requests to make this cake. Everyone says it stays so moist!!

Ingredients

  • 1 c
    oil
  • 2 c
    sugar
  • 3 large
    eggs
  • 3 c
    all purpose flour
  • 1 tsp
    soda
  • 1/4 tsp
    salt
  • 1 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 1 tsp
    vanilla extract
  • 1 c
    finely chopped nuts
  • 3 c
    grated apples
  • GLAZE

  • 1/2 c
    sugar
  • 1/4 tsp
    soda
  • 1 1/2 tsp
    vanilla
  • 1/4 c
    buttermilk
  • 2 Tbsp
    butter

How to Make Fresh Apple Cake

Step-by-Step

  1. Combine flour,salt,soda,cinnamon, & nutmeg. Set aside.
  2. Grate apples. Set aside.
  3. Combine oil & sugar. Beat well. Add eggs. Beat well.
  4. Add dry ingredients. Batter will be very thick. Add vanilla. Add pecans & apples.
  5. Pour batter into a 10 inch greased & floured tube pan. Bake at 350 for about 1 hr & 15 min.
  6. Poke holes all over cake with toothpick. Spoon hot glaze over hot cake. Cool and remove from pan.
  7. GLAZE: Combine all ingredients. Boil for 4 minutes stirring occ.
