fresh apple cake
This is my mother's recipe. She always made it for holiday dinners. It is always a hit with family & friends. I get lots of requests to make this cake. Everyone says it stays so moist!!

Ingredients
- 1 cup oil
- 2 cups sugar
- 3 large eggs
- 3 cups all purpose flour
- 1 teaspoon soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1 cup finely chopped nuts
- 3 cups grated apples
- GLAZE
- 1/2 cup sugar
- 1/4 teaspoon soda
- 1 1/2 teaspoons vanilla
- 1/4 cup buttermilk
- 2 tablespoons butter
How To Make fresh apple cake

Step 1Combine flour,salt,soda,cinnamon, & nutmeg. Set aside.

Step 2Grate apples. Set aside.

Step 3Combine oil & sugar. Beat well. Add eggs. Beat well.

Step 4Add dry ingredients. Batter will be very thick. Add vanilla. Add pecans & apples.

Step 5Pour batter into a 10 inch greased & floured tube pan. Bake at 350 for about 1 hr & 15 min.

Step 6Poke holes all over cake with toothpick. Spoon hot glaze over hot cake. Cool and remove from pan.

Step 7GLAZE: Combine all ingredients. Boil for 4 minutes stirring occ.
