fresh apple cake

I used to make this cake and send it to my son and his unit when he was in the military overseas. It keeps so well for shipping as a gift. And it didn't last long after it got there because it is so good. They were always asking for more. It is always one of the cakes I get requested to make during Christmas holidays. The house smells so wonderful when it is baking.

Ingredients

  • 1 1/4 cups cooking oil
  • 2 cups sugar
  • 4 - eggs, well beaten
  • 2 1/2 cups plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 teaspoons vanilla
  • 1 cup chopped pecans
  • 4 cups red delicious apples, peeled, cored and cut into medium sized chunks

How To Make fresh apple cake

  • Step 1
    Combine oil and sugar. Beat in eggs. Beat until creamy. Add vanilla.
  • Step 2
    Sift together all of the dry ingredients and add to liquid ingredients a little at a time. Batter will be very stiff.
  • Step 3
    Mix in apples and pecans. Bake in ungreased 13X9 pan at 325 F for 55 minutes. When a toothpick inserted in the middle comes out clean, it's done. Hope you enjoy it. We sure do!
