fresh apple cake
I used to make this cake and send it to my son and his unit when he was in the military overseas. It keeps so well for shipping as a gift. And it didn't last long after it got there because it is so good. They were always asking for more. It is always one of the cakes I get requested to make during Christmas holidays. The house smells so wonderful when it is baking.

Ingredients
- 1 1/4 cups cooking oil
- 2 cups sugar
- 4 - eggs, well beaten
- 2 1/2 cups plain flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 2 teaspoons vanilla
- 1 cup chopped pecans
- 4 cups red delicious apples, peeled, cored and cut into medium sized chunks
How To Make fresh apple cake

Step 1Combine oil and sugar. Beat in eggs. Beat until creamy. Add vanilla.

Step 2Sift together all of the dry ingredients and add to liquid ingredients a little at a time. Batter will be very stiff.

Step 3Mix in apples and pecans. Bake in ungreased 13X9 pan at 325 F for 55 minutes. When a toothpick inserted in the middle comes out clean, it's done. Hope you enjoy it. We sure do!
