fresh apple cake

This is a wonderful cake, and most everyone loves it, I make it a lot for Bake Sales and its the first to go. I think the cherries, pineapple and nuts makes the cake. It is very moist and it gets better with age. If you can keep it in the house that long. Will freeze well also.

Ingredients
- 2 cups sugar
- 1 cup cooking oil
- 2 - eggs
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 3 cups chopped, peeled apples (i used fuji & red delicious)
- 1 cup chopped pecans
- 1 cup crushed pineapple, drained
- 1/2 cup maraschino cherries, chopped
- 3 cups all purpose flour
How To Make fresh apple cake

Step 1Cream sugar, oil;

Step 2add eggs. Beat Well.

Step 3Add salt, soda, vanilla, apples, nuts, pineapples, cherries; mix well.

Step 4then add flour a little at a time. Blend well after each addition.

Step 5Pour in well greased and floured tube pan and bake one hour at 350 degrees.

Step 6***NOTE*** can also be bake in mini loaf pans for one hour. (Makes about 8-10 mini loaf) This cake is wonderful without a glaze, but is also good with a powdered sugar glaze.
