This is a wonderful cake, and most everyone loves it, I make it a lot for Bake Sales and its the first to go. I think the cherries, pineapple and nuts makes the cake. It is very moist and it gets better with age. If you can keep it in the house that long. Will freeze well also.

Ingredients For fresh apple cake

  • 2 c
  • 1 c
    cooking oil
  • 2
  • 1 tsp
  • 1 tsp
    baking soda
  • 1 tsp
  • 3 c
    chopped, peeled apples (i used fuji & red delicious)
  • 1 c
    chopped pecans
  • 1 c
    crushed pineapple, drained
  • 1/2 c
    maraschino cherries, chopped
  • 3 c
    all purpose flour

How To Make fresh apple cake

    Cream sugar, oil;
  • 2
    add eggs. Beat Well.
  • 3
    Add salt, soda, vanilla, apples, nuts, pineapples, cherries; mix well.

    then add flour a little at a time. Blend well after each addition.

    Pour in well greased and floured tube pan and bake one hour at 350 degrees.

    ***NOTE*** can also be bake in mini loaf pans for one hour. (Makes about 8-10 mini loaf) This cake is wonderful without a glaze, but is also good with a powdered sugar glaze.
