FRESH APPLE CAKE

1 ccooking oil
1 tspbaking soda
3 cchopped, peeled apples (i used fuji & red delicious)
1 cchopped pecans
1 ccrushed pineapple, drained
1/2 cmaraschino cherries, chopped
3 call purpose flour
How to Make FRESH APPLE CAKE
- Cream sugar, oil;
- add eggs. Beat Well.
- Add salt, soda, vanilla, apples, nuts, pineapples, cherries; mix well.
- then add flour a little at a time. Blend well after each addition.
- Pour in well greased and floured tube pan and bake one hour at 350 degrees.
- ***NOTE*** can also be bake in mini loaf pans for one hour. (Makes about 8-10 mini loaf)
This cake is wonderful without a glaze, but is also good with a powdered sugar glaze.
