Ingredients

  • 12
    nilla wafers
  • 12
    cupcake liners
  • 16 oz
    cream cheese
  • 1 c
    sugar
  • 1/4 c
    flour
  • 1 tsp
    vanilla extract
  • 2
    eggs
  • 1 can(s)
    favorite pie filling

How to Make fool proof mini cheesecakes

Step-by-Step

  1. preheat oven to 350 degrees F.
  2. beat cream cheese with handheld mixer until fluffy
  3. add sugar, flour and vanilla, beating well
  4. add eggs one at a time beating well after each addition
  5. place a paper cup liner in each cup of standard muffin pan.
  6. place one nilla wafer on bottom of paper liner
  7. spoon cream cheese over nilla wafer about 3/4 full
  8. bake until set, usually about 20 mins
  9. spoon pie filling over the top (covering slightlly or smothering it is completely up to you)
  10. I also found strawberry jam or preserves works well too
  11. COOL COMPLETELY IN FRIDGE BEFORE YOU SERVE!!!!
