12nilla wafers
-
12cupcake liners
-
16 ozcream cheese
-
1 csugar
-
1/4 cflour
-
1 tspvanilla extract
-
2eggs
-
1 can(s)favorite pie filling
How to Make fool proof mini cheesecakes
- preheat oven to 350 degrees F.
- beat cream cheese with handheld mixer until fluffy
- add sugar, flour and vanilla, beating well
- add eggs one at a time beating well after each addition
- place a paper cup liner in each cup of standard muffin pan.
- place one nilla wafer on bottom of paper liner
- spoon cream cheese over nilla wafer about 3/4 full
- bake until set, usually about 20 mins
- spoon pie filling over the top (covering slightlly or smothering it is completely up to you)
- I also found strawberry jam or preserves works well too
- COOL COMPLETELY IN FRIDGE BEFORE YOU SERVE!!!!
