these mini cheesecakes are great snack size desserts. but HARD TO EAT JUST ONE!!!!!

Ingredients

  • 12 - nilla wafers
  • 12 - cupcake liners
  • 16 ounces cream cheese
  • 1 cup sugar
  • 1/4 cup flour
  • 1 teaspoon vanilla extract
  • 2 - eggs
  • 1 can favorite pie filling

How To Make fool proof mini cheesecakes

  • Step 1
    preheat oven to 350 degrees F.
  • Step 2
    beat cream cheese with handheld mixer until fluffy
  • Step 3
    add sugar, flour and vanilla, beating well
  • Step 4
    add eggs one at a time beating well after each addition
  • Step 5
    place a paper cup liner in each cup of standard muffin pan.
  • Step 6
    place one nilla wafer on bottom of paper liner
  • Step 7
    spoon cream cheese over nilla wafer about 3/4 full
  • Step 8
    bake until set, usually about 20 mins
  • Step 9
    spoon pie filling over the top (covering slightlly or smothering it is completely up to you)
  • Step 10
    I also found strawberry jam or preserves works well too
  • Step 11
    COOL COMPLETELY IN FRIDGE BEFORE YOU SERVE!!!!
