How to Make fool proof mini cheesecakes
1preheat oven to 350 degrees F.
2beat cream cheese with handheld mixer until fluffy
3add sugar, flour and vanilla, beating well
4add eggs one at a time beating well after each addition
5place a paper cup liner in each cup of standard muffin pan.
6place one nilla wafer on bottom of paper liner
7spoon cream cheese over nilla wafer about 3/4 full
8bake until set, usually about 20 mins
9spoon pie filling over the top (covering slightlly or smothering it is completely up to you)
10I also found strawberry jam or preserves works well too
11COOL COMPLETELY IN FRIDGE BEFORE YOU SERVE!!!!
