This is an easy to fix snack cake, perfect when friends stop by. It is flourless, using oats instead. The applesauce and walnuts add texture and great flavor!

Ingredients

  • 1-3/4 cup quick-cooking oats
  • 3/4 cup light brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup applesauce, unsweetened
  • 1/4 cup canola oil
  • 1 - large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup chopped walnuts
  • 2 teaspoons butter

How To Make flourless applesauce oatmeal walnut snack cake

  • Step 1
    Preheat oven to 350 degrees F. Line an 8- x 8-inch baking pan with parchment or wax paper.
  • Step 2
    Place the oats in a blender or food processor and blend until resembles flour. Place in medium bowl. Add brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt; mix well. Measure out 1/4 cup of this mixture to a small bowl and set aside.
  • Step 3
    In a small bowl, stir together applesauce, oil, egg, and vanilla; add to dry ingredients and mix until thoroughly combined. Stir in walnuts and pour into baking dish. Mix together the butter with the reserved dry ingredients to make a streusel-like topping and sprinkle over top of the cake.
  • Step 4
    Bake for 25 to 30 minutes, or until toothpick inserted in center comes out dry. Let cool, then cut into squares.
