Ingredients
- 1-3/4 cup quick-cooking oats
- 3/4 cup light brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup applesauce, unsweetened
- 1/4 cup canola oil
- 1 - large egg
- 1 teaspoon vanilla extract
- 1/3 cup chopped walnuts
- 2 teaspoons butter
How To Make flourless applesauce oatmeal walnut snack cake

Step 1Preheat oven to 350 degrees F. Line an 8- x 8-inch baking pan with parchment or wax paper.

Step 2Place the oats in a blender or food processor and blend until resembles flour. Place in medium bowl. Add brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt; mix well. Measure out 1/4 cup of this mixture to a small bowl and set aside.

Step 3In a small bowl, stir together applesauce, oil, egg, and vanilla; add to dry ingredients and mix until thoroughly combined. Stir in walnuts and pour into baking dish. Mix together the butter with the reserved dry ingredients to make a streusel-like topping and sprinkle over top of the cake.

Step 4Bake for 25 to 30 minutes, or until toothpick inserted in center comes out dry. Let cool, then cut into squares.
