Any flavor Newton will do, I think the raspberry is my favorite. You probably can mix and match too. Maybe apple cinnamon with some fig. Be creative. Have fun baking!

Ingredients

BATTER

1/3 c
unsalted butter, softened
1/2 c
sugar
1 large
egg
1 tsp
vanilla extract
1 1/4 c
flour
1 1/2 tsp
baking powder
1/2 tsp
salt
1/2 c
milk

FILLING

2/3 c
brown sugar, firmly packed
1 tsp
cinnamon
2 Tbsp
unsalted butter, cold

fig newton cookies, crumbled

CRUMBLE TOPPING

1 c
flour
1/3 c
sugar
1/3 c
brown sugar, firmly packed
1/4 tsp
salt
1/2 c
oats
1 stick
cold unsalted butter, cubed

How to Make Fig Newton Coffee Cake

Step-by-Step

  • 1Preheat oven to 350 degrees. Grease an 8" X 8" or 9" X 9" baking pan.
  • 2For batter cream butter and sugar together and beat in eggs and vanilla.
  • 3Combine flour, baking powder and salt; add to creamed mixture alternately with milk; set aside.
  • 4For filling combine brown sugar, cinnamon and cut in butter until crumbly. Fold in crumbled cookies; set aside.
  • 5Spread a third of the batter into pan. Top with half of the filling. Repeat layers. Top with remaining batter.
  • 6For topping stir together flour, sugars and salt. Cut in butter and stir in oats. Press together and top coffee cake with large crumbles.
  • 7Bake for 35-40 minutes or until golden brown. Cool on a wire rack before cutting.
