They're great when made with the chunky all natural variety, choose a brand without any added sugar. The chocolate chips are optional, but if you're a fan of peanut butter cups, you may want to add them.

- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/2 cup chunky peanut butter
- 1 teaspoon pure vanilla extract
- 2 tablespoons unsalted butter, softened to room temperature
- 1 1/4 cups unbleached flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup semisweet chocolate chps, optional, but very good

Step 1Grease and flour a 9x9 baking pan. Preheat oven to 350 degrees.

Step 2Beat the eggs and both sugars until smooth. Add the peanut butter and continue mixing until well combined. Beat in the vanilla and butter and mix until thoroughly incorporated.

Step 3Measure the flour, baking powder and salt and sift directly into the batter. Mix gently until well combined and no trace of the dry ingredients remains. Using a wooden spoon, stir in the chocolate chips. Spread the dough into the 9x9 pan with a spatula. Bake for 25 minutes or until toothpick inserted into the center comes out clean or with only crumbs, not batter, on it. Allow to cool for 1 hour before cutting.
