I oould eat one of these daily, but it wouldn't compliment my girlish figure ;) This was my first "big hit" as a domestic chef. Everytime fall comes around, they ask, "Where's the pumpkin bars?" and your family will, too.

Ingredients

  • 2 cups white sugar
  • 1 cup vegetable oil
  • 4 - eggs
  • 16 ounces pumpkin
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 16 ounces powdered sugar
  • 2 teaspoons vanilla

How To Make family favorite pumpkin bars

  • Step 1
    Preheat oven to 350
  • Step 2
    Combine sugar, oil, eggs, pumpkin in large bowl.
  • Step 3
    Mix flour, baking soda. cinnamon, baking powder & salt in large bowl. Add to wet mixture and stir just until combined.
  • Step 4
    Pour mixture onto rimmed cookie pan and bake for 35-40 minutes until toothpick comes out clean. Cool.
  • Step 5
    While cake cools, beat butter, cream cheese, sugar and vanilla to make frosting. Then spread on cooled cake and slice.
