I oould eat one of these daily, but it wouldn't compliment my girlish figure ;) This was my first "big hit" as a domestic chef. Everytime fall comes around, they ask, "Where's the pumpkin bars?" and your family will, too.

Ingredients
- 2 cups white sugar
- 1 cup vegetable oil
- 4 - eggs
- 16 ounces pumpkin
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, softened
- 8 ounces cream cheese, softened
- 16 ounces powdered sugar
- 2 teaspoons vanilla

Step 1Preheat oven to 350

Step 2Combine sugar, oil, eggs, pumpkin in large bowl.

Step 3Mix flour, baking soda. cinnamon, baking powder & salt in large bowl. Add to wet mixture and stir just until combined.

Step 4Pour mixture onto rimmed cookie pan and bake for 35-40 minutes until toothpick comes out clean. Cool.

Step 5While cake cools, beat butter, cream cheese, sugar and vanilla to make frosting. Then spread on cooled cake and slice.
