I oould eat one of these daily, but it wouldn't compliment my girlish figure ;) This was my first "big hit" as a domestic chef. Everytime fall comes around, they ask, "Where's the pumpkin bars?" and your family will, too.

Ingredients

  • 2 c
    white sugar
  • 1 c
    vegetable oil
  • 4
    eggs
  • 16 oz
    pumpkin
  • 2 c
    all-purpose flour
  • 2 tsp
    baking soda
  • 2 tsp
    cinnamon
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/4 c
    unsalted butter, softened
  • 8 oz
    cream cheese, softened
  • 16 oz
    powdered sugar
  • 2 tsp
    vanilla

How to Make Family Favorite Pumpkin Bars

Step-by-Step

  1. Preheat oven to 350
  2. Combine sugar, oil, eggs, pumpkin in large bowl.
  3. Mix flour, baking soda. cinnamon, baking powder & salt in large bowl. Add to wet mixture and stir just until combined.
  4. Pour mixture onto rimmed cookie pan and bake for 35-40 minutes until toothpick comes out clean. Cool.
  5. While cake cools, beat butter, cream cheese, sugar and vanilla to make frosting. Then spread on cooled cake and slice.
