My family loves this moist and delicious cake and looks forward to it every Fall as the pumpkins are ready for harvest! This is a great dessert to serve on Thanksgiving in addition to traditional pumpkin pies.
1Pre-heat oven to 350 degrees.
Beat together sugar and oil, mix in beaten eggs and pumpkin.
2Stir into mixture the flour, salt, baking powder, baking soda,and cinnamon. Add walnuts, coconut and pineapple.
3Pour into 9x13 greased pan. Bake 25-30 minutes.
4Ice cake after it has cooled. For icing, cream the butter and cream cheese together, gradually add in vanilla, then powdered sugar. Stir in walnuts and coconut, spread on cake. Keep cake refrigerated.
