My family loves this moist and delicious cake and looks forward to it every Fall as the pumpkins are ready for harvest! This is a great dessert to serve on Thanksgiving in addition to traditional pumpkin pies.

Ingredients

  • 1 2/3 cups sugar
  • 1 cup oil
  • 4 - eggs, beaten
  • 1 1/2 cups pumpkin, canned or cooked
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 cup walnuts, chopped
  • 1/2 cup coconut
  • 1/2 cup crushed pineapple, drained
  • CREAM CHEESE ICING
  • 1/4 stick butter
  • 8 ounces cream cheese
  • 3 cups powdered sugar
  • 1 teaspoon vanilla
  • 1/4 cup walnuts, chopped
  • 1/2 cup coconut

How To Make fall in love pumpkin cake

  • Step 1
    Pre-heat oven to 350 degrees. Beat together sugar and oil, mix in beaten eggs and pumpkin.
  • Step 2
    Stir into mixture the flour, salt, baking powder, baking soda,and cinnamon. Add walnuts, coconut and pineapple.
  • Step 3
    Pour into 9x13 greased pan. Bake 25-30 minutes.
  • Step 4
    Ice cake after it has cooled. For icing, cream the butter and cream cheese together, gradually add in vanilla, then powdered sugar. Stir in walnuts and coconut, spread on cake. Keep cake refrigerated.
