eggnog oatmeal layer cake

I'm an eggnog fanatic, and I created another oat layer cake recipe. I used eggnog in the oat mixture, cake, and frosting. There are chocolate-covered raisins and almonds inside. To make the cinnamon cane sugar, add 1 Tbsp ground cinnamon to 4 Tbsp of cane sugar.

Ingredients

  • 3 cups rolled oats, divided
  • 1 cup chocolate covered raisins
  • 4 tablespoons cinnamon cane sugar, divided
  • 3 cups chilled nonalcoholic eggnog, divided
  • 1 cup chopped chocolate covered almonds
  • 1 box yellow cake mix
  • 1 1/4 cups water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tablespoon margarine
  • 1 tablespoon malted milk powder
  • 1 cup heavy cream
  • 3/4 cup half and half
  • 8 ounces cream cheese, softened

How To Make eggnog oatmeal layer cake

  • Step 1
    In a medium jar, combine 1 cup rolled oats, chocolate-covered raisins, 1 tablespoon cinnamon/cane sugar, and 1 cup eggnog. Whisk together with a fork until blended. Cover and refrigerate for 4 hours.
  • Step 2
    Preheat oven to 350 degrees F. Coat two 8' round cake pans with cooking spray. Add chopped chocolate-covered almonds and sprinkle with 2 tablespoons cinnamon/cane sugar on both cake pans.
  • Step 3
    In a large bowl, combine cake mix, water, vegetable oil, eggs, and 1/2 cup eggnog; beat on low speed for 3 minutes.
  • Step 4
    Add oat mixture into the cake batter and beat again on medium speed for 30 seconds. Pour the batter into cake pans.
  • Step 5
    Melt margarine in a large skillet over medium heat. Add remaining rolled oats, malted milk powder, and 1 tablespoon cinnamon/cane sugar. Saute for 5 minutes or until the oats are caramelized.
  • Step 6
    Remove from heat. Transfer to a small bowl and set aside.
  • Step 7
    Whisk heavy cream, half and half, cream cheese, and the remaining eggnog and cinnamon/cane sugar in a medium bowl for 3 minutes until combined.
  • Step 8
    Place the first cake (bottom side) on a serving plate. Spread half of the frosting onto the cake thickly and evenly. Add sauteed oat mixture and press down with a spoon.
  • Step 9
    Place a second cake on top. Spread the frosting on the sides and top of the cake.
