I am sure there are similar cake recipes out there with other names but this one is from a lady, Ethel Mae Creasy Kirk, that I worked with in 1965 and I have always called it Effie' s cake. Simply delicious.

Method:
Bake

Ingredients

  • 1 large
    angel food cake, broken in small pieces
  • 45
    marshmallows
  • 1 medium
    can of pineapple, crushed, drained, save juice
  • 1 small
    jar of green maraschino cherries, cut up fine
  • 1 small
    jar of red maraschino cherries, cut up fine
  • 1 c
    chopped nuts
  • 1-1/2 tsp
    vanilla
  • 1 can(s)
    bakers coconut
  • 1 pt
    whipping cream

How to Make Effie's Cake

Step-by-Step

  1. Melt marshmallows in pineapple juice and set aside to cool. Add vanilla to mixture
  2. break up cake and put in large dish. I use 9 x 13. Mix cherries, nuts and pineapple together and add to cooled marshmallow mixture. Whip cream and fold in the marshmallow mixture. Mix about 1-1/2 cups of mixture into cake and the rest of mixture on top of cake and top with coconut. Refrigerate
