During World War II, many groceries were rationed, including butter and eggs. Cooks found many ways to substitute and still come up with a great cake.
This recipe is by the mother of an old school friend of mine, and comes from the book, "Cooking Behind the Fence", a collection of memories and recipes from the early residents of Oak Ridge, TN.
