Edith Kelly's Mayonnaise Chocolate Cake
This recipe is by the mother of an old school friend of mine, and comes from the book, "Cooking Behind the Fence", a collection of memories and recipes from the early residents of Oak Ridge, TN.
How to Make Edith Kelly's Mayonnaise Chocolate Cake
- Sift dry ingredients together 3 times, mixing thoroughly.
- Mix mayonnaise, vanilla, and hot water. Add slowly to flour mixture as you beat.
- Pour into greased loaf or layer pan. Bake 25-30 minutes at 350 degrees.
- Dust with powdered sugar, or with your favorite chocolate icing. Or, slice and drizzle with a raspberry syrup.
