edith kelly's mayonnaise chocolate cake
During World War II, many groceries were rationed, including butter and eggs. Cooks found many ways to substitute and still come up with a great cake. This recipe is by the mother of an old school friend of mine, and comes from the book, "Cooking Behind the Fence", a collection of memories and recipes from the early residents of Oak Ridge, TN.

Ingredients
- 1 cup sugar
- 6 tablespoons cocoa powder
- 1/3 teaspoon salt
- 1 teaspoon soda
- 1/2 teaspoon baking powder
- 2 cups flour
- 3/4 cup mayonnaise
- 1 teaspoon vanilla
- 1 cup hot water

Step 1Sift dry ingredients together 3 times, mixing thoroughly.

Step 2Mix mayonnaise, vanilla, and hot water. Add slowly to flour mixture as you beat.

Step 3Pour into greased loaf or layer pan. Bake 25-30 minutes at 350 degrees.

Step 4Dust with powdered sugar, or with your favorite chocolate icing. Or, slice and drizzle with a raspberry syrup.
