This is a GREAT dessert to make in the summer! The presentation is great! And the taste does NOT let you down!! Even the kids love it!

Ingredients

  • - graham crackers
  • 2 - small packages, instant french vanilla pudding
  • 12 ounces cool whip
  • 3 cups milk
  • TOPPING
  • 2 tablespoons white corn syrup
  • 3 tablespoons margarine
  • 3 tablespoons milk
  • 6 tablespoons cocoa powder
  • 2 tablespoons oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups confectioners' sugar

How To Make eclair cake

  • Step 1
    Mix pudding with milk and add cool whip. Line bottom of 9" x 13" pan with graham crackers. Top with half the pudding mixture. Make a second layer with graham crackers and pudding. Top with crackers. Refrigerate.
  • Step 2
    For the topping: Melt margarine in a large saucepan. Add corn syrup, milk, cocoa, and oil. Mix and bring to a boil. Remove from heat and add vanilla. Add usgr and mix in a blender on medium speed until smooth. Pour over cake and refrigerate. Enjoy!!
