Ingredients

  • ·
    graham crackers
  • 2
    small packages, instant french vanilla pudding
  • 12 oz
    cool whip
  • 3 c
    milk
  • TOPPING

  • 2 Tbsp
    white corn syrup
  • 3 Tbsp
    margarine
  • 3 Tbsp
    milk
  • 6 Tbsp
    cocoa powder
  • 2 Tbsp
    oil
  • 1 tsp
    vanilla extract
  • 1 1/2 c
    confectioners' sugar

How to Make Eclair Cake

Step-by-Step

  1. Mix pudding with milk and add cool whip. Line bottom of 9" x 13" pan with graham crackers. Top with half the pudding mixture. Make a second layer with graham crackers and pudding. Top with crackers. Refrigerate.
  2. For the topping: Melt margarine in a large saucepan. Add corn syrup, milk, cocoa, and oil. Mix and bring to a boil. Remove from heat and add vanilla. Add usgr and mix in a blender on medium speed until smooth. Pour over cake and refrigerate. Enjoy!!
