easy luscious lemon cake (from a cake mix)
I made this cake for my birthday (April 19, 2017). I love lemon, and apparently so does everyone else, because it didn't last long! The glaze is what really makes this cake. You may use fresh or bottled lemon juice. Also, if you don't have brandy or rum, you can substitute another tablespoon of lemon juice. This cake can also be made as a Bundt cake, and the glaze brushed on while cake is still warm. I like using the 13"x9" pan because it can be served right from the pan.

Ingredients
- CAKE
- 1 box lemon cake mix
- 3/4 cup water
- 1/4 cup lemon juice
- 1/2 cup olive oil
- 3 large eggs
- GLAZE
- 3 tablespoons lemon juice
- 1 tablespoon brandy or white rum
- 3/4 cup white granulated sugar

Step 1Preheat oven to 350°F. Grease and lightly flour a 13"x9" cake pan.

Step 2Mix cake mix, water, lemon juice, oil, and eggs with mixer on medium speed for 2 minutes. Pour into prepared pan.

Step 3Bake 28 to 33 minutes, until cake springs back when lightly touched, or until toothpick inserted in center comes out clean.

Step 4During last 10 minutes of baking, combine GLAZE ingredients until well blended and smooth. Remove cake from oven and let cool on rack 10 minutes. Use a pastry brush to spread glaze on warm cake.

Step 5Allow cake to cool completely. Glaze will harden to a crisp coating.
