This is a delicious, fresh tasting cake. I like it too because you can make it ahead of time.

Ingredients

  • 1 box 18 1/2 oz. white cake mix
  • 2 cups sugar
  • 1 cup milk
  • 12 ounces frozen coconut, divided
  • 12 ounces non-dairy whipped topping (cool whip)

How To Make easy coconut cake

  • Step 1
    Prepare cake mix as directed on box and bake in 9 x 13 pan.
  • Step 2
    In saucepan bring milk and sugar to a boil.
  • Step 3
    When cake is done, immediately poke holes with a fork and spoon 1/2 of milk and sugar mixture over cake.
  • Step 4
    Stir 6 oz. of coconut into remaining sugar and milk mixture over cake. Cool cake completely in refrigerator.
  • Step 5
    Spread whipped topping over cooled cake and sprinkle with remaining coconut. Keep refrigerated . Best after 2 days in refrigerator
