Ingredients For easy carrot cake muffins

  • 1 box
    spice cake mix
  • 3/4 c
    applesauce
  • 2 c
    finely shredded carrots
  • 1/2 c
    golden raisins
  • 1
    8 oz pkg reduced-fat cream cheese, softened
  • 4 Tbsp
    unsalted butter
  • 1-1/2 c
    powdered sugar
  • 1 Tbsp
    vanilla

How To Make easy carrot cake muffins

  • 1
    Heat oven to 350. Lightly spray muffin cups w/ cooking spray. In lg bowl, make cake as directed on box. Beat in applesauce. Stir in carrots and raisins.

    Spoon batter into muffin cups, 2/3-full. Bake as directed on box for muffins. Let cool. In bowl, beat cream cheese until creamy. Add in vanilla. Beat in powdered sugar. Frost cooled muffins.
