- 1 box spice cake mix
- 3/4 cup applesauce
- 2 cups finely shredded carrots
- 1/2 cup golden raisins
- 1 - 8 oz pkg reduced-fat cream cheese, softened
- 4 tablespoons unsalted butter
- 1-1/2 cup powdered sugar
- 1 tablespoon vanilla
How To Make easy carrot cake muffins

Step 1Heat oven to 350. Lightly spray muffin cups w/ cooking spray. In lg bowl, make cake as directed on box. Beat in applesauce. Stir in carrots and raisins.

Step 2Spoon batter into muffin cups, 2/3-full. Bake as directed on box for muffins. Let cool. In bowl, beat cream cheese until creamy. Add in vanilla. Beat in powdered sugar. Frost cooled muffins.
