I love carrot cake, I love cheesecake, so I combined them both! And it's easy to make, since it starts out w/ a cake mix.

Ingredients
- 1 package carrot cake mix, like duncan hines
- 1 cup water
- 1/2 cup canola oil
- 6 large eggs
- 1/2 cup golden raisins
- 3 - 8 oz pkgs, reduced-fat cream cheese, softened
- 1-1/2 cup sugar
- 2 teaspoons vanilla
How To Make easy carrot cake cheesecake

Step 1Heat oven to 325. Spray a 10" springform pan w/ cooking spray, lightly. In lg bowl, beat carrot cake mix, water and 3 eggs until smooth. Fold in raisins. Pour into pan.

Step 2In another lg bowl, beat cream cheese until smooth. Beat in sugar and vanilla. Beat in remaining 3 eggs. Pour mix over cake layer. Place pan on a lg baking sheet. Bake for about 1-1/2 hrs or until center is set.
