This was the first cake I ever made. It did crack the first time but it was still good...

Ingredients

  • 1 c
    sugar
  • 1/2 c
    vegetable oil
  • 1 1/2 c
    all purpose flour
  • 2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1 tsp
    cinnamon
  • 1 c
    carrots, grated
  • 2
    eggs, beaten
  • 1/2 c
    nuts, chopped

How to Make Easy Carrot Cake...

Step-by-Step

  1. Heat oven to 350F. In medium bowl mix sugar & oil together. Sift the dry ingredients,mix in carrots & add in the sugar mixture.
  2. Add 1 egg in at a time & beat well with each egg. Then add in the nuts of any kind & mix very well. Then pour into pre oiled 2 1/2 inch loaf pan.
  3. Bake for 55 to 60 mins. Cover with aluminum foil for the first 20 mins. It will reduce cracking. Serve warm or cold.
