easy carrot cake...
This was the first cake I ever made. It did crack the first time but it was still good...

Ingredients
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup carrots, grated
- 2 - eggs, beaten
- 1/2 cup nuts, chopped
How To Make easy carrot cake...

Step 1Heat oven to 350F. In medium bowl mix sugar & oil together. Sift the dry ingredients,mix in carrots & add in the sugar mixture.

Step 2Add 1 egg in at a time & beat well with each egg. Then add in the nuts of any kind & mix very well. Then pour into pre oiled 2 1/2 inch loaf pan.

Step 3Bake for 55 to 60 mins. Cover with aluminum foil for the first 20 mins. It will reduce cracking. Serve warm or cold.
