easy caramel apple cake
I threw this together the other night from some things I had on hand. It turned out good, so I thought I would post it for all to enjoy.

Ingredients
- 1 package yellow cake mix (i used pillsbury moist supreme classic yellow)
- 3 large eggs
- 1/3 cup vegetable oil
- 1 cup water
- 2 teaspoons apple pie spice (i made my own, and will post my recipe for that as well)
- 2 cups chopped apples (i used 4 medium sized paula red)
- 1 can caramel frosting ( i used frosting creations)
How To Make easy caramel apple cake

Step 1Preheat oven to 350 degrees and coat a 13x9 pan with cooking spray. You may also grease and flour the pan if you would like to remove the cake from the pan before frosting.

Step 2Peel and core apples. Chop apples fairly fine (I used a hand chopper that I have from Pampered Chef, I love that thing!!) If you don't have a chopper, a knife will work fine too. Measure apples and set aside.

Step 3Begin with dry cake mix in a large bowl, add apple pie spice to dry mix.

Step 4Add oil, water, and eggs and beat according to package directions. Usually 2 minutes on medium speed.

Step 5Fold in chopped apples.

Step 6Pour batter into prepared pan, tap pan firmly on counter to remove any air bubbles.

Step 7Bake at 350 for 34 to 38 minutes or until a toothpick inserted near the center comes out clean. Cool pan on a wire rack.

Step 8When cake is cool, spread with frosting and serve. Refrigerate any leftovers.
