easy caramel apple cake

I threw this together the other night from some things I had on hand. It turned out good, so I thought I would post it for all to enjoy.

Ingredients

  • 1 package yellow cake mix (i used pillsbury moist supreme classic yellow)
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 cup water
  • 2 teaspoons apple pie spice (i made my own, and will post my recipe for that as well)
  • 2 cups chopped apples (i used 4 medium sized paula red)
  • 1 can caramel frosting ( i used frosting creations)

How To Make easy caramel apple cake

  • Step 1
    Preheat oven to 350 degrees and coat a 13x9 pan with cooking spray. You may also grease and flour the pan if you would like to remove the cake from the pan before frosting.
  • Step 2
    Peel and core apples. Chop apples fairly fine (I used a hand chopper that I have from Pampered Chef, I love that thing!!) If you don't have a chopper, a knife will work fine too. Measure apples and set aside.
  • Step 3
    Begin with dry cake mix in a large bowl, add apple pie spice to dry mix.
  • Step 4
    Add oil, water, and eggs and beat according to package directions. Usually 2 minutes on medium speed.
  • Step 5
    Fold in chopped apples.
  • Step 6
    Pour batter into prepared pan, tap pan firmly on counter to remove any air bubbles.
  • Step 7
    Bake at 350 for 34 to 38 minutes or until a toothpick inserted near the center comes out clean. Cool pan on a wire rack.
  • Finished product!
    Step 8
    When cake is cool, spread with frosting and serve. Refrigerate any leftovers.
