easy banana spice cake (eggless)
Too many bananas? Make this cake to use up 4 of them! ***I just checked on the cake baking, and it looks great. 10 minutes to go.*** But I noticed something awful - 3 EGGS sitting out on the counter!!! I accidentally left the eggs out of the cake. So you can make this without the eggs if you like. I will have to wait until next time to see how different it is with the eggs!!! NOTE: This cake turned out GREAT, even without the eggs! Moist, and a very fine crumb. But next time I'll put the eggs in. Maybe.

Ingredients
- 3-4 - very ripe bananas
- 2 tablespoons lemon juice
- 1 box yellow cake mix
- 2 teaspoons cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 3 large eggs
- 5 ounces water
- 1/4 cup oil
How To Make easy banana spice cake (eggless)

Step 1Preheat oven to 350°F. Grease and flour a Bundt pan (or spray with baker's coating). Mash bananas very well with lemon juice and set aside.

Step 2In large mixing bowl, stir together cake mix and spices. Add eggs, water, oil, and mashed bananas. Mix with electric mixer for 2 minutes at high speed, scraping bowl occasionally. Pour batter into prepared pan.

Step 3Bake approximately 45-50 minutes, until pick inserted near center comes out clean. Cool on wire rack in pan for 10 minutes. Invert and remove from pan and cool completely.

Step 4Use 1/2 a container of your favorite frosting; microwave until it's pourable. Drizzle it over cooled cake. Some suggestions are: Cream Cheese frosting, Lemon, Caramel, or Vanilla.
