easy banana spice cake (eggless)

Too many bananas? Make this cake to use up 4 of them! ***I just checked on the cake baking, and it looks great. 10 minutes to go.*** But I noticed something awful - 3 EGGS sitting out on the counter!!! I accidentally left the eggs out of the cake. So you can make this without the eggs if you like. I will have to wait until next time to see how different it is with the eggs!!! NOTE: This cake turned out GREAT, even without the eggs! Moist, and a very fine crumb. But next time I'll put the eggs in. Maybe.

Ingredients

  • 3-4 - very ripe bananas
  • 2 tablespoons lemon juice
  • 1 box yellow cake mix
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 3 large eggs
  • 5 ounces water
  • 1/4 cup oil

How To Make easy banana spice cake (eggless)

  • Step 1
    Preheat oven to 350°F. Grease and flour a Bundt pan (or spray with baker's coating). Mash bananas very well with lemon juice and set aside.
  • Step 2
    In large mixing bowl, stir together cake mix and spices. Add eggs, water, oil, and mashed bananas. Mix with electric mixer for 2 minutes at high speed, scraping bowl occasionally. Pour batter into prepared pan.
  • Step 3
    Bake approximately 45-50 minutes, until pick inserted near center comes out clean. Cool on wire rack in pan for 10 minutes. Invert and remove from pan and cool completely.
  • Step 4
    Use 1/2 a container of your favorite frosting; microwave until it's pourable. Drizzle it over cooled cake. Some suggestions are: Cream Cheese frosting, Lemon, Caramel, or Vanilla.
