I got this recipe from a dear friend 30+ years ago. I have made it many times and always get rave reviews. I even used the same recipe to make red velvet whoopie pies for my co workers at Valentine this year. Total success! They were gone in less than an hour!

Ingredients
- 1 box devil's food cake mix
- 1 teaspoon vanilla flavoring
- 1 bottle red food coloring
- 1 package cream cheese (room temp)
- 1 stick butter or margarine (room temp)
- 1 box powdered sugar
- 1/2 cup chopped pecans
- 1 - capful vanilla flavor (use the cap on the bottle)
- 12 - pecan halves
How To Make easiest red velvet cake

Step 1Spray with baking spray 2 9in round cake pans. preheat oven according to pkg directions.

Step 2mix cake according to pkg directions and add vanilla and red colorong at end. blend well. pour into prepared pans and bake as directed. cool cake completely.

Step 3cream together cream cheese and butter well. add 1 capful vanilla then add powdered sugar a little at a time mixing well after each addition. (you might not need the entire box, but I usually do). Add chopped pecans to frosting. Spread over cooled cake. If you want a beautiful presentation place 12 pecan halves on top of cake (1 for each slice!) Enjoy!!!
