drunken pumpkin roll

I keep getting request to make this, and with different flavors of rum or whiskey, the favorite so far has been fireball.

Ingredients For drunken pumpkin roll

  • 3
    eggs
  • 1 c
    sugar
  • 2 tsp
    cinnamon
  • 1 tsp
    ground nutmeg
  • 1 tsp
    ginger
  • 1 c
    pumpkin
  • 3/4 c
    flour
  • 1/4 c
    whiskey
  • 1 tsp
    baking powder
  • 1 tsp
    lemon juice
  • FILLING
  • 16 oz
    cream cheese room temp
  • 1 1/2 c
    powdered sugar
  • 1 1/2 tsp
    vanilla
  • 1/2 c
    butter softened
  • 2/3 c
    whiskey

How To Make drunken pumpkin roll

    Beat the eggs, sugar and spices until well mixed, than add pumpkin, flour, baking soda, lemon juice and rum until smooth, this will be a bit runny. Line a jelly roll pan with wax paper and spray with oil. Pour batter into pan and spread evenly. Bake at 350 degrees for 15 minutes. Turn cake onto a powdered sugar covered towel peel off the wax paper and roll while still hot.

    While cake is cooling mix all ingredients for the filling accept the whiskey. Once the filling is smooth start adding the whiskey, this will be a bit runny, just refrigerate, it will thicken.

    Once the cake is cool, carefully unroll and add the filling, reroll and refrigerate for about an hour.
