Quick, easy and really moist for a fast retreat for ripening bananas!

This bread is actually better - later! Once the bread is cooled I pre-slice with a serrated edge knife - keeping slices intact. Wrap immediately in couple layers of plastic wrap tightly and refrigerate.

This does well frozen and made ahead for unexpected guests with needs!

Ingredients

  • 1 1/2 c
    granulated sugar
  • 1/2 c
    margerine or butter
  • 2
    eggs, slightly beaten
  • 1/4 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1 1/2 c
    flour
  • 1/2 c
    pecans, chopped
  • 3 large
    bananas, very ripe, mashed
  • 1 tsp
    vanilla extract, pure

How to Make Drema's Moist Banana Bread

Step-by-Step

  1. Preheat oven to 375 degrees F. Grease and lightly flour a loaf pan (approximately 8 x 5).
  2. In large mixing bowl combine and blend sugar, butter and beaten eggs.
  3. In smaller bowl sift together the flour, soda and baking powder. Add these dry ingredients to the above mixture. Stir well. Add mashed bananas and chopped pecans and vanilla.
  4. Bake at 375 degrees F for 1 hour.
