drema's moist banana bread

Quick, easy and really moist for a fast retreat for ripening bananas! This bread is actually better - later! Once the bread is cooled I pre-slice with a serrated edge knife - keeping slices intact. Wrap immediately in couple layers of plastic wrap tightly and refrigerate. This does well frozen and made ahead for unexpected guests with needs!

Ingredients
- 1 1/2 cups granulated sugar
- 1/2 cup margerine or butter
- 2 - eggs, slightly beaten
- 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 cups flour
- 1/2 cup pecans, chopped
- 3 large bananas, very ripe, mashed
- 1 teaspoon vanilla extract, pure

Step 1Preheat oven to 375 degrees F. Grease and lightly flour a loaf pan (approximately 8 x 5).

Step 2In large mixing bowl combine and blend sugar, butter and beaten eggs.

Step 3In smaller bowl sift together the flour, soda and baking powder. Add these dry ingredients to the above mixture. Stir well. Add mashed bananas and chopped pecans and vanilla.

Step 4Bake at 375 degrees F for 1 hour.
