Quick, easy and really moist for a fast retreat for ripening bananas! This bread is actually better - later! Once the bread is cooled I pre-slice with a serrated edge knife - keeping slices intact. Wrap immediately in couple layers of plastic wrap tightly and refrigerate. This does well frozen and made ahead for unexpected guests with needs!

Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup margerine or butter
  • 2 - eggs, slightly beaten
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cups flour
  • 1/2 cup pecans, chopped
  • 3 large bananas, very ripe, mashed
  • 1 teaspoon vanilla extract, pure

How To Make drema's moist banana bread

  • Step 1
    Preheat oven to 375 degrees F. Grease and lightly flour a loaf pan (approximately 8 x 5).
  • Step 2
    In large mixing bowl combine and blend sugar, butter and beaten eggs.
  • Step 3
    In smaller bowl sift together the flour, soda and baking powder. Add these dry ingredients to the above mixture. Stir well. Add mashed bananas and chopped pecans and vanilla.
  • Step 4
    Bake at 375 degrees F for 1 hour.
