Ingredients
- 1 package white cake mix
- 1 - 3 oz pkg sugar-free strawberry gelatin mix
- 1 cup fresh strawberries, mashed
- 1 cup canola oil
- 1/2 cup milk
- 4 - eggs
- 1 cup sweetened, flaked coconut
- 1/2 cup chopped pecans
- 1 - 8 oz pkg reduced-fat cream cheese, softened
- 1/2 cup butter, softened
- 3-1/2 cups powdered sugar
- 1 cup fresh strawberries
- 1/2 cup sweetened, flaked coconut
- 1/2 cup chopped pecans

Step 1Heat oven to 350 . Spray 3-9" round cake pans w/ cooking spray. In lg bowl, stir together cake mix and gelatin mix. make a well in center of mix. Pour into well, the mashed berries, oil, milk, and eggs. Beat on low until blended. Beat on medium for 4 mins.

Step 2Fold in 1 cup coconut and 1/2 cup pecans. Divide batter evenly among pans. Bake 25-30 mins, or until a toothpick inserted in center comes out clean. Let cool while making frosting.

Step 3In bowl, mash remaining berries, drain of any liquid. In another bowl, beat cream cheese and butter until smooth. Beat in powdered sugar and mashed strawberries. Fold in 1/2 cup coconut and remaining pecans. Frost cooled cake layers. Chill, covered for 4 hrs.
