How to Make Down Yonder Chocolate Cake
- Beat egg whites until frothy. Gradually add 1/2 cup of sugar, beating until stiff. Set aside
Sift remaining 1 cup sugar, flour, soda and salt into a large bowl. Add oil and 1/2 of the buttermilk. Beat 1 minute , add remaining buttermilk, egg yolks and cooled melted chocolate. Beat 1 minute longer. Fold in meringue. Pour into 2 prepared 9 inch cake pans. Bake at 350 for 30-35 minutes.
- Down Yonder Frosting
3 Tablesp. Butter( softened)
3 oz. cream cheese ( softened)
1 box powdered sugar
3-4 Tablesp Buttermilk
2 oz. Unsweetened chocolate ( melted and cooled)
1 teasp vanilla.
Cream butter and cream cheese. Add powdered sugar alternately with buttermilk. Beat in chocolate and vanilla , mixing well. If frosting seems too thick add a little more milk.
