Ingredients
- 3 - granny smith apples cut in 1/2 inch wedges. c
- 2 - macintosh apples cut in 1/2 inch wedges
- 2 - fresh lemon juice
- 3 cups flour
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons cinnamon
- 1/8 teaspoon nutmeg
- 2 tablespoons lemon zest
- 2 cups white sugar
- 1 cup canola or vegetable oil
- 1/2 cup orange juice
- 1 1/2 teaspoons vanilla
- - confectioners sugar for dusting top

Step 1Peel and cut apples into wedges place in bowl and add tablespoon of lemon juice and coat well to avoid apples turning brown..heat oven to 359F..coat a 9 by 13 inch baking.pan with cooking spray..line with parchment leaving an overhang on both ends.

Step 2In a bowl mix together flour, baking soda cinnamon and nutmeg...In another bowl beat together eggs, sugar, oil, orange juice and vanilla combine the wet and dry, mix well to incorporate..add half of the apples and spread into pan,,arrange the remaining apples on top and sprinkle with cinnamon and sugar mix of 3 TBS sugar and 2 tsps cinnamon.

Step 3I forgot to add in the zest and this you can add in with the egg mixture...bake 55 to 60 minutes or test with toothpick in the center if clean it is ready to come out of oven.. let cool 15 minutes in pan remove to wire rack to completely cool..sprinkle with confectioners sugar when cooled..cut into bars or squares...Enjoy with a dollop of ice cream..
