diy spice cake mix
Another DIY cake mix for your larder! I am collecting these to put in a cookbook for my children (and I of course!). A spice cake can be used for so many other kinds of cakes too...carrot cakes, applesauce cakes, oatmeal cakes, etc. I hope you enjoy this recipe and the convenience of being able to have it on the shelf if you need it, without having to get it at the store. This is not only easier, but cheaper!

Ingredients
- BAGGED CAKE MIX DRY INGREDIENTS:
- 2 1/3 cups all-purpose flour
- 1/3 cup nonfat dry milk powder
- 3 teaspoons baking powder
- 3/4 teaspoon salt
- 1 1/2 cups granulated sugar
- 1/2 cup plus 1 tablespoon butter flavored shortening
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- INGREDIENTS TO BE ADDED TO THE MIX:
- 1/2 cup butter plus 1 tablespoon, softened
- 2 - eggs
- 1 cup water
- 1 teaspoon vanilla extract
How To Make diy spice cake mix

Step 1Combine all dry mix ingredients and store in an airtight container or Ziploc bag with instructions and the date packaged.

Step 2Preheat oven to 350F degrees. Grease and flour a 9 x 13-inch cake pan.

Step 3In a large bowl with an electric hand mixer on high speed, cream butter until smooth. Add 1 egg at a time; beating well after each addition. Reduce speed to low and add water and vanilla and continue beating for approximately 2 minutes more.

Step 4Slowly add the pre-made cake mix to the wet ingredients one cup at a time mixing thoroughly after each addition and scraping down sides.

Step 5Pour into the prepared cake pan. Tap on counter to distribute and smooth top.

Step 6Bake for approximately 25-30 minutes. Cool thoroughly before frosting or serving.
