dixie's rhubarb cake

Every June a group of us neighbor ladies would have a garage sale at my house. My sister usually made the trip to Wausau with her car trunk packed full too! Needless to say it was FUN social event. Every year Dixie arrived early in the morning with a warm fresh out of the oven Rhubarb cake. We all knew that she had been up early and was outside picking fresh rhubarb for this cake! Everywhere I take this recipe today, they always ask for the recipe.

Ingredients
- 1 1/2 cups brown sugar
- 1/2 cup shortening (i use butter)
- 1 - egg
- 2 cups flour
- 1 teaspoon baking soda
- 1 cup sour cream
- 1 1/2 cups rhubarb, finely chopped
- - topping:
- 1/2 cup sugar
- 1 tablespoon butter
- 1 teaspoon cinnamon
- 1/2 cup walnuts, chopped
How To Make dixie's rhubarb cake

Step 1Preheat oven 350 degrees. Grease and flour a 13x9 inch cake/baking pan.

Step 2Cream brown sugar and shortening. Add egg. Beat well until light and fluffy. Add vanilla.

Step 3Combine flour and baking soda. Add 1/2 flour alternating with sour cream. Mix until combined. Do not overbeat.

Step 4Fold in rhubarb. Pout into prepared baking pan.

Step 5Combine sugar, butter, cinnamon, and walnuts. It should be crumbly. Sprinkle on top of batter.

Step 6Bake for 45 minutes or until it test done.
