Diet Coke Float Cake

I always joked with Brenda that there was nothing diet or healthy about this recipes, but it was soooooo good.

Ways to make a "better" cake:
- Mix a chocolate cake mix with a box or prepared sugar-free chocolate pudding (do the same for strawberry or vanilla cakes)
- Instead of using oil, substitute applesauce (same as oil amount) or butterbuds (3 Tbsp liquid butterbuds)
- Instead of using eggs, substitute egg beaters or egg whites

Convection Oven


  • CAKE:

  • 1 box
    french vanilla cake mix (can use reduced fat or sugar free cake mix)
  • 1 c
    diet coke
  • 1/4 c
    cocoa powder
  • 1/2 stick
    light butter, melted
  • 2
    eggs (or 3 egg whites)
  • 1 tsp
    vanilla extract
  • GLAZE:

  • 1/4 c
    diet coke
  • 1/2 c
    reduced fat (or whipped, or reduced sugar) chocolate icing

How to Make Diet Coke Float Cake


  1. Preheat oven to 350 degrees
  2. In a large mixing bowl - Combine cake ingredients
  3. Beat mixture at low speed with an electric mixture for about 30 seconds
  4. If needed, use a spatula to scrape down sides of bowl
  5. Beat at medium speed for about 2 minutes
  6. Pour batter into bundt pan and bake at 350 degrees for about 35 minutes or until toothpick inserted in center comes out clean
  7. Cool cake about 15 minutes in pan on wire rack
  8. Pierce top of cake with a fork
  9. To prepare glaze - Bring diet coke to a boil
  10. Stir in icing
  11. Stir over heat until melted
  12. Pour icing over pierced cake
  13. OPTIONAL: Can serve with fat-free vanilla ice cream
