Diet Coke Float Cake

I always joked with Brenda that there was nothing diet or healthy about this recipes, but it was soooooo good.

Ways to make a "better" cake:
- Mix a chocolate cake mix with a box or prepared sugar-free chocolate pudding (do the same for strawberry or vanilla cakes)
- Instead of using oil, substitute applesauce (same as oil amount) or butterbuds (3 Tbsp liquid butterbuds)
- Instead of using eggs, substitute egg beaters or egg whites

Convection Oven



1 box
french vanilla cake mix (can use reduced fat or sugar free cake mix)
1 c
diet coke
1/4 c
cocoa powder
1/2 stick
light butter, melted
eggs (or 3 egg whites)
1 tsp
vanilla extract


1/4 c
diet coke
1/2 c
reduced fat (or whipped, or reduced sugar) chocolate icing


1Preheat oven to 350 degrees
2In a large mixing bowl - Combine cake ingredients
3Beat mixture at low speed with an electric mixture for about 30 seconds
4If needed, use a spatula to scrape down sides of bowl
5Beat at medium speed for about 2 minutes
6Pour batter into bundt pan and bake at 350 degrees for about 35 minutes or until toothpick inserted in center comes out clean
7Cool cake about 15 minutes in pan on wire rack
8Pierce top of cake with a fork
9To prepare glaze - Bring diet coke to a boil
10Stir in icing
11Stir over heat until melted
12Pour icing over pierced cake
13OPTIONAL: Can serve with fat-free vanilla ice cream
