I was making supper for my parents one night because they were cashing in a dinner coupon I had given them so long ago. I needed a recipe that would go with coffee. I got on the computer and found a War Cake recipe, but I didn't have all the ingredients. So I substituted a little of this for a little of that, and, voila, a new recipe was born. My parents loved it. My mom has tried to make it but did not use the same ingredients as I did. It didn't taste as good, she said.

Blue Ribbon Recipe

An old-fashioned apple spice cake recipe with a few modern-day twists. The cake has the texture of a blondie filled with fall spices and a layer of apples on top. It's easy to make and easy on your wallet. Moist and delicious, we thought it was best served warm.

Ingredients

  • 1 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon pumpkin spice instant dry pudding (or allspice)
  • 1 cup warm water
  • 1/2 cup virgin coconut oil (or Crisco, softened)
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 3 medium McIntosh apples, cored, peeled, and sliced

We used a 7x11 baking dish when testing. The cake is thinner but will work if you don't have the specified baking dish.
  • Peel, core, and slice apples.

    Bake in a preheated 350-degree oven for about 35 to 40 minutes or until a toothpick inserted in the center comes out clean. Let cool for about 15 minutes (or longer if you can but cut when still warm). Add Cool Whip on top and enjoy.
