This recipe has been passed down to me through generations. It is easy to make and a guaranteed crowd pleaser. Every time I make one, somebody wants me to make one for them. Great for Thanksgiving or Christmas. UM! UM! GOOD!

Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda and salt
- 2 cups sugar
- 1 cup coconut
- 1/2 teaspoon cinnamon
- 1 cup vegetable oil
- 4 large - eggs
- 2 cups grated carrots
- 8 oz. cans crushed pineapple, drained
- 1/2 cup chopped nuts
How To Make delicious carrot cake

Step 1Sift first 3 ingredients in large bowl.

Step 2Stir in sugar, coconut, cinnamon, oil, eggs, carrots, pineapple and nuts.

Step 3Pour into 2 buttered floured 9 inch cake pans.

Step 4Bake 350 degrees for 40 minutes. Let cool on wire rack.
