delicious carrot cake

This recipe has been passed down to me through generations. It is easy to make and a guaranteed crowd pleaser. Every time I make one, somebody wants me to make one for them. Great for Thanksgiving or Christmas. UM! UM! GOOD!

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda and salt
  • 2 cups sugar
  • 1 cup coconut
  • 1/2 teaspoon cinnamon
  • 1 cup vegetable oil
  • 4 large - eggs
  • 2 cups grated carrots
  • 8 oz. cans crushed pineapple, drained
  • 1/2 cup chopped nuts

How To Make delicious carrot cake

  • Step 1
    Sift first 3 ingredients in large bowl.
  • Step 2
    Stir in sugar, coconut, cinnamon, oil, eggs, carrots, pineapple and nuts.
  • Step 3
    Pour into 2 buttered floured 9 inch cake pans.
  • Step 4
    Bake 350 degrees for 40 minutes. Let cool on wire rack.
