  • 2
    large ripe bananas, pureed (about 1 cup)
  • 1 box
    yellow cake mix
  • 1 box
    vanilla instant pudding (3 oz.)
  • 1/2 c
  • 4
  • 1 tsp
  • 1/2 c
    chopped nuts
  • 1/3 c
    packed brown sugar
  • 1 tsp
  • 1/2 tsp
  • 1/2 c
    mini chocolate chips (optional)

How to Make Delicious Banana Coffee Cake


  1. Combine pureed bananas, cake mix, pudding mix, oil, eggs and vanilla in a large mixing bowl. Mix well, beat on medium speed 4 minutes, scraping sides of bowl occasionally.
  2. Mix nuts, chocolate chips, brown sugar, cinnamon and nutmeg. Set aside. Pour one- half cake batter into pan. Sprinkle with sugar mixture, cover with remaining batter.
  3. Stick a knife in the batter, swirl in figure 8 patterns through the layers.
  4. Bake at 325 degrees in a greased and floured Bundt or tube pan for 60-65 minutes.
  5. Cool in pan on rack for 20 minutes, then invert onto rack to cool completely.
