date & pecan cake with a citrus rind cream cheese frosting

I am originally from South Africa and this is a Family recipe for Years. Have to translate it from Afrikaans (Our Language) to English

Ingredients

  • FOR THE CAKE
  • 250g - pitted dates (chopped)
  • 5 tablespoons butter (room temperature)
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1 - tea bag
  • 1 - egg (beaten)
  • 1 cup packed brown sugar
  • 1/2 cup seedles grapes
  • 1/2 cup instant oats
  • 1/2 cup unprocessed wheat bran (hodgson mill)
  • 1/2 cup pecans (chopped)
  • 1 - green apple (grated)
  • 1 1/2 cups self raising flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • FOR THE FROSTING
  • 3 1/2 oz - cream cheese (room temperature)
  • 3 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 cup bakers sugar
  • 1 cup powder sugar
  • - rind of 1 orange

How To Make date & pecan cake with a citrus rind cream cheese frosting

  • Step 1
    Preheat Oven to 350 degrees F Greese a 10" Spring Form Pan. Set aside.
  • Step 2
    Pour water over teabag. Let stand for a while. In a mixing bowl, combine butter and dates. Pour tea over and let cool. In a Large mixing bowl, beat egg and sugar until fluffy. Add raisins,oatmeal,bran,pecans,apple and cooled dates. Sift in Flour, baking powder and salt and mix well. pour into buttered pan and bake for 45 min. Cool on wire rack.
  • Step 3
    Beat cream cheese and butter and add orange rind and vanilla. Add bakers sugar slowly until well mixed. Add powder sugar and spread over cooled cake. Top with Whole pecans
