Ingredients

  • FOR THE CAKE

  • 250g
    pitted dates (chopped)
  • 5 Tbsp
    butter (room temperature)
  • 1 tsp
    baking soda
  • 1 c
    boiling water
  • 1
    tea bag
  • 1
    egg (beaten)
  • 1 c
    packed brown sugar
  • 1/2 c
    seedles grapes
  • 1/2 c
    instant oats
  • 1/2 c
    unprocessed wheat bran (hodgson mill)
  • 1/2 c
    pecans (chopped)
  • 1
    green apple (grated)
  • 1 1/2 c
    self raising flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • FOR THE FROSTING

  • 3 1/2 oz
    cream cheese (room temperature)
  • 3 Tbsp
    butter
  • 1 tsp
    vanilla extract
  • 1 c
    bakers sugar
  • 1 c
    powder sugar
  • ·
    rind of 1 orange

How to Make DATE & PECAN CAKE WITH A CITRUS RIND CREAM CHEESE FROSTING

Step-by-Step

  1. Preheat Oven to 350 degrees F
    Greese a 10" Spring Form Pan. Set aside.
  2. Pour water over teabag. Let stand for a while. In a mixing bowl, combine butter and dates. Pour tea over and let cool. In a Large mixing bowl, beat egg and sugar until fluffy. Add raisins,oatmeal,bran,pecans,apple and cooled dates. Sift in Flour, baking powder and salt and mix well. pour into buttered pan and bake for 45 min. Cool on wire rack.
  3. Beat cream cheese and butter and add orange rind and vanilla. Add bakers sugar slowly until well mixed. Add powder sugar and spread over cooled cake. Top with Whole pecans
